Shiitake mushrooms and chicken – a healthy, quick, easy recipe

You can find many recipes for chicken with shiitake mushroom on the internet, but this is mine that I got from my mother. This is my favourite dish. The results were good when I shared a flat in college with friends and cooked this dish many times. I guess my hard work paid off. When you cook the mushrooms you can cook them whole after cleaning, but this takes longer, perhaps another 15-25 minutes. It also depends on the size of the mushrooms. Full-sized mushrooms have a more juicier texture. Shiitake mushrooms are good for your health as they boost up your immunity system. They also have antioxidants which fight free radicals (which in a sense, combats aging).

Servings: 2 *Note the serving size here is for two people, assuming that this dish will be served with rice. You can adjust the ingredients according to your own preferences. You can, for example, use three chicken thighs with more mushrooms if you plan to eat this dish without a side.


Four dried Shiitake mushrooms or Chinese mushrooms

2 Chicken Thighs

Three cloves of chopped garlic

1 tablespoon of oil

You can substitute 1 teaspoon salt for 1 teaspoon soy sauce if you don't have any soy sauce. Adjust to your taste.

1/4 cup water

Add 1 or 2 spring onion garnishes (optional).

Recipes for cooking:

1. Add enough hot water to the bowl to cover the mushrooms and let them soak for 15 min. To ensure that the dirt on the mushrooms is removed, soak the mushrooms in hot water for 15 minutes. Drain the hot water and wash the mushrooms. Then, cut them into shreds.

2. Heat the oil in a large saucepan or wok on medium high heat. Stir-fry garlic for 30 secs, then add mushrooms and stir fry for 1-2 mins. Add the chicken to the pan and stir-fry on both sides for 1-2 minute until lightly browned.

4. Serve the dish garnished with spring onions and soy sauce. This is a simple and easy dish that can be prepared quickly at home by anyone. It's never been easier to cook.
